our reservations start the night before our park tickets do. We are on the dining plan. 1 table sevice,1snack,1courter service. I made reservations that first night for dinner at the polynesian O'hanas. Are the other meals for that day carried over?

Thanks for coming to the Mom's Panel!

Your dining credits will actually even out over your stay as my guess is that the counter service and snack you don't use on the day you check-in will be used on the day that you check out.

Here's how the dining plan works: You have access to all of the meal and snack credits on your dining plan from the moment of check-in until midnight of the day you check out.  Disney doesn't ration your credits, you're simply given 1 table service, 1 counter service and 1 snack per person per night of your stay. You can use them all immediately, or throughout your vacation. If you use one table service on your arrival day, you'll have one counter service and one snack for your day of check-out, if you ration out your meal credits.
