I'm so excited to hear you get a chance to visit Disneyland Resort during the holiday time. You are correct that
dining reservations are able to be booked 60 days out. However, sometimes there are locations that do not open up exactly at the 60-day mark and it can be completely random. Unfortunately, that doesn't make it super easy when planning. I took a quick look at the reservations and did not see
Oga's Cantina at Disneyland Resort availability so I'm not sure if they haven't opened or if they are already full. This is one of the most popular locations for Guests, so I imagine it could already be booked. Don't stress though, I am hopeful that you still could be able to cross this off your must-do list!
My first suggestion is to just keep checking the dining reservations. There is a chance you could randomly see something pop up, especially right before your arrival. The day or two leading up to visits there usually are new reservations that pop up from Guests canceling or changing reservations last minute.
Oga's Cantina at Disneyland Resort also participates in the
mobile walk-up list. This means you can head to Batuu and walk close to Oga's Cantina location. Then you can search for that location in the Disneyland app and see if the walk-up list has availability. If there's availability, you will be able to join the list and it will give you an approximate wait time and alert you when it's your turn. The list does close when it's full but can open up later when there's availability again.
It also never hurts to just walk up and kindly ask if there is any availability. I've been able to walk in without reservations more than once. It's helpful to go at off times too. I checked the app at 10:30 a.m. and it said the list was full but decided to ask a Cast Member out front and they were able to immediately walk us in without any wait.
