Jennifer, Sorry to hear that planning your dining has been so frustrating! Unfortunately, at this time, calling (407)WDW-DINE is the only way to make your Advance Dining Reservations. Let me give you some tips that might make your next call a little easier.
Try calling mid-afternoon on a weekday. I seem to get through pretty easily at this time. Before you call, have a list of restaurants you would like. If you can't get your first choice, you have back-ups to try. (Can't get Sci-Fi Dine-In Theatre? Then ask for 50's Prime Time Cafe. Can't get Chef Mickey's for breakfast? Try asking for 'Ohana at the Polynesian.)
Before I call, I map out my "perfect" dining schedule on a calendar, and when I get to a cast member, I start with my first choices. I start with Chef Mickey's (or if you want Cinderella's Royal Table or other difficult reservations.) If I want dinner on Tuesday, but can only get Wednesday, I will flip my days. If I can only get a late dinner, I take it and plan a later lunch. Being flexible is a must, especially during a Free Dining period or other busy time.
Have the cast member check several dates and times. They are happy to help, but you have to ask for what you want. They don't know your schedule or your plans, so you have to keep on having them research for you so you can enjoy your dining experiences! Also, don't be afraid to try new restaurants! You might just find a new favorite place to dine. Click

I know this sounds complicated, but once you get the hang of it, you will be making reservations quickly. It kind of becomes a puzzle getting your schedule to work out. Once you have your list of reservations written down with their confirmation numbers, you will feel great that you did it!
Try calling again and let me know if you need additional help. Good luck!
