I too have children who are tall for their age and quite often appear older than their chronological age. Young children of 6 often do become tired and need more rest than adults and I often recommend that parents to take this into consideration when planning their vacation.
Since your 6 year old son is already 5 foot tall, he will not fit into the conventional strollers. However he will fit into the brand "Special Tomato Jogger" which is rented through some of the Disney featured stroller providers. The Special Tomato Jogger is 14" wide, has a 25" tall seat back, and can accommodate children up to 110 pounds. If for some reason the Special Tomato Jogger is unavailable and you cannot locate one in your area to bring with you, there is no rule that you cannot rent a manual wheelchair for your child. However since the number of manual wheelchairs in each theme park is in limited quantity, I do ask that you choose to rent a wheelchair from an outside vendor. This way your child will not be shortening the supply of wheelchairs in the theme parks for Guests who have physical mobility impairments. Here is a link to access
