    I remember frequenting stores at Downtown Disney that have "make your own" items, such as lightsabers, Mr.Potato Heads, etc. Which stores are they?

    I believe the store you are thinking of is called "Once Upon a Toy".  It is in Downtown Disney very close to the Lego Store and McDonald's.  It is one very large store that has many areas throughout. 

    I don't know if you have been there recently, but during my last trip you could get Darth-Tater and many other Potato Head/Star Wars cross over characters.
