I am sorry to hear about your recent injury, but I am very excited to hear that you will be visiting the Walt Disney World Resort in just a few days. During one of my last visits, I was also suffering from a torn meniscus, so I completely understand your concern.
There are a few rides that will allow you to ride up to the boarding area and transfer directly from your ECV to the ride vehicle. There are a handful of rides that will require you to transfer to a wheelchair before boarding, like
Pirates of the Caribbean. You could use crutches if you so choose, but they would need to remain with you while you ride.
There are a few rides and attractions that have a moving walkway that can be slowed down, but not able to stop for you to get on. I noticed that
The Haunted Mansion, Spaceship Earth, and the Tomorrowland Transit Authority use this type of boarding system. I would recommend checking with a Cast Member at the time of boarding for specific options. Wishing you a speedy recovery and a magical vacation.
