I really want to see the Illuminations show at Epcot. If I go to a specific restaurant, (such as the San Angel Inn, which supposedly has great views) can I stay there "all evening" to watch the show? OR will they ask me to leave if the show has

Your best bet, Chris, is to schedule a dining reservation that coincides with Illuminations.  I would suggest a late dinner around 8:00.  You should be warned, though, that not all of the tables at La Hacienda de San Angel (not San Angel Inn, by the way, which offers NO views of Illuminations), afford guests a "good view" of Illuminations.  There is no guarantee that you'd be seated in one of the prime tables and you are not permitted to wait for a table with a view.

There are, however, plenty of great viewing spots around the World Showcase lagoon where you do not have to depend on the luck of the draw.  Choosing one of those spots is really the only guaranteed way to get a great view of the show!
