Victoria & Albert's is such a glorious dining experience; I absolutely understand wanting to get a reservation. The week between Christmas and New Year's Eve is one of the most popular one with guests, so getting reservations at many of the in-demand restaurants can be more challenging. However, if you are on top of things, I'm optimistic that you'll be successful in making a reservation.
If you are a Disney resort guest, you will be able to make 10 days worth of dining reservations when you are 180 days out. For example, if you arrive on Christmas Eve, you can begin making reservations on June 27, 2015. Online reservations begin at 6:00 am EST, which is an hour earlier than calling in reservations. Once the window opens to make reservations, I would begin with the restaurants you want the most rather than going through them in chronological order. Have an ideal date/time in mind, but be open to all dates. Also, sometimes the dates that are further out have more availability. For example, you might want to begin looking at the availability on December 31 rather than December 25 if you are booking 10 days worth of reservations as a Disney resort guest. If you aren't a Disney resort guest, you may need to get online each day.
Also, you may also find it just as easy to call Victoria & Albert's at 407-WDW-DVNA to make your reservation or keep this phone number as a back-up plan in case the online reservation system isn't cooperating.
