we really dont know which park we will be in what day, so how can we plan a dinner reservation? does that mean we have to decide every park ahead of time?

Peter, the answer to your question is yes and no. Yes, it is helpful to know which parks you plan to visit each day and make corresponding dining reservations.  No, because with the Park Hoppers, you can play at the park of your choice and dine at another park with ease.  Advanced Dining Reservations are only recommended, so that you may have a guaranteed dining experience.  You may also choose Counter Service locations in the parks for a more flexible approach.  I would highly recommend making reservations if you plan to dine at Cinderella's Royal Table, Chef Mickey's or The Spirit of Aloha Polynesian Luau.
