I've read online that kids under 3 don't require a ticket to enter the parks, will I have to provide proof of age for my 2-year old at any of the parks?

Hello Amber and welcome to the Disney Parks Moms Panel where I'm more than happy to assist with your families plans to visit the magic of Walt Disney World Resort.
There's nothing more precious than seeing the wonder of Disney through the eyes of a small child which is why I'm so very thrilled to know you're planning to introduce your darling little 2 yEar old Mouseketeer to the magic in the very near future.  It also gives me great pleasure to share that in my own personal experience Mickey does not require proof of age to be provided at the entrance to any of the Disney Theme Parks.
It is correct that at present all children aged between 3 & 9 years old will require their own ticket and of course Guests aged 10+ years require a separately priced ticket - all of which can be purchased online via this Disney Theme Parks Tickets link.
Plus I also thought you may find this Planning for Pre-School Kids & Little Ones to be an extra useful resource for your upcoming trip to Walt Disney World Resort.
    Have a great Disney day.
