I have just read that for an almost four year old on the dining plan, our son will have to choose of the children's menu. Are children's menu choices more than just the usual burger or chicken nuggets? Thank you.

Generally speaking, Heather, you'll find more variety on the kids menus at table service restaurants than you will at quick service locations.  Most of the quick service options will offer fairly standard kid fare including: chicken nuggets, pizza, hot dogs, peanut butter and jelly sandwiches, or burgers.  Depending upon how adventurous an eater your son is, he might enjoy some of the World Showcase restaurants in Epcot.  Even quick service locations there offer items like teriyaki chicken, cheese empanadas, chilled chicken wraps, and sweet & sour chicken.  When it comes to dining at table service locations, you'll find a wider variety of menu items to choose from.  You can find a variety of grilled meats, pasta, steak and even fish on kids menus at various in park and resort restaurants.  My advice to you would be to peruse the menus before you go and try to plan meals in restaurants where your son will have the option to enjoy a wide variety of flavorful meals.  I hope that helps!
