You can use your Dining Plan however it fits you until your credits are gone! Sounds like you have the Standard Dining Plan. On the Standard Plan, Disney recommends 1 quick service, 1 table service, and 1 snack per day to ration out a normal eating day for a family, but you are more than welcome to use it in whatever combination you need. I presume they ration it out this way, so families have enough food throughout their Disney stay, but it's definitely not mandatory...
Our family has doubled up, or had credits at the end of our stay due to missed appointments, etc., so it shouldn't be a problem at all!
