You certainly won't lose any of your park admissions if you dine, say, outside of the parks on any given day. When we stay for a week, we generally try to do a "no park" day just to enjoy the resort with our children. We use our meal credits at the resort, and still have whatever park tickets remaining even if we didn't visit a park that day.
