Since Lightning Lane pricing varies by date, Lightning Lane purchases and selections are only valid for the specific date of purchase, and while it is possible to modify the date of a Lightning Lane purchase (pending availability), the modification must be made before redeeming any of your Lightning Lane selections for the initial date of purchase. With this in mind, if you don't think you'll be able to make the most of your purchase (due to weather or scheduling), I would suggest modifying as soon as possible for the best chance of securing your must-do attractions.
You can conveniently complete the process in the My Disney Experience app by tapping the three horizontal lines in the bottom corner of the screen and then selecting 'Lightning Lane Passes' from the options that populate. From there, you'll choose the previously purchased Lightning Lane Multi Pass you'd like to modify and follow the prompts to choose a new date from those available.
Since you mentioned concerns of weather impacting your purchase, I wanted to make sure you were aware that almost all of
EPCOT's Lightning Lane experiences take place indoors, so it is much less likely that these attractions would become unavailable due to inclement weather than the outdoor attractions at Walt Disney World's other theme parks. Of course, it's never guaranteed that all attractions will be operational on any given day, but I hope that bit of information provides you with some peace of mind as you plan.
