I hear you, my friend. Gingerbread is absolutely not my favorite, but I sure do love the holiday gingerbread house at
Disney’s Grand Floridian Resort & Spa. Not only does it make the resort’s lobby smell incredible, but it’s an astounding work of pastry art and creates the perfect Christmas ambience.
The Disney Parks Blog shared the recipe straight from the bakery at the gingerbread house at Disney’s Grand Floridian Resort & Spa. The promotional pieces about the gingerbread house note that
over 1,000 pounds of honey go into the gingerbread used by the pastry chefs, and the recipe notes that it’s modified from the recipe used in building the house, and may taste different. I’m not sure if that’s because they need to use ingredients with a longer shelf life or higher durability when constructing the shingles, or if the actual recipe is proprietary.

Special Diets team Special.Diets@DisneyWorld.com to request the ingredients, though I can’t guarantee they’ll be able to respond since you’re request isn’t related to a food allergy or special dietary need (although I agree that a good gingerbread recipe feels like a need!).
