You're going to have such a magical time when you set sail on the Disney Wonder in November. How awesome that it's sailing out of Galveston - right in your home state!
Your assigned dining rotation will not be guaranteed until the day you embark on your cruise. When you arrive at the port, you'll be given your Key To The World card, and your dining rotation will be listed at the bottom. My advice would be to schedule your visit to
Palo on one of the last evenings of your cruise, when you've already rotated through each of the Main Dining restaurants.
Pirate Night usually falls in the middle of your cruise - I understand you not wanting to miss any of the swashbuckling fun!
If you discover that your dining plans don't match up the way you'd like, you can make adjustments on your first afternoon onboard. You'll be given a Personal Navigator when you check in at the port - a daily schedule with times and locations of everything happening on the ship. There will be a time and place listed to make changes to your dining assignment. The Dining Team is very accommodating when working with guests to make sure they have the arrangements they need!
Make sure to save room for dessert when you dine at Palo - the chocolate souffle is to die for!
