Hi Paul! It sounds like a wonderful holiday trip you are planning for your special family!
I would suggest you plan on one park a day for touring and experiencing the attractions and entertainment. As the time gets closer you can see what parks will have the Extra Magic Hours on the days of your vacation and consider returning to those parks for the evening hours when it isn't so crowded.
Also be aware you can also purchase tickets for Mickey's Very Merry Christmas Party at the Magic Kingdom. This is a special event held throughout the holiday season and the parade is amazing as well as the fireworks. Just seeing the castle lit up at night will make magic in your minds forever! Magic Kingdom-Crystal Palace with Winnie the Pooh and Friends
Hollywood Studios-Prime Time or Sci Fi to me are better spots then any character dining here
Animal Kingdom-Donald's Safari Breakfast at Tusker House
EPCOT-Garden Grille
Contemporary-Chef Mickey
Beach Club-Cape May breakfast
Fort Wilderness-Mickey's Backyard Barbecue
Since you arrive late on the 12th try to pick a park that is possibly open late with extra hours....the birthday child gets in free on their birthday.
