Thank you for visiting the Disney Parks Moms Panel with your question. My family is also two adults and one 7-year-old child, so I can give you some ideas as to how we structure our trips.
It's great that you already have a character meal reserved at Epcot. I would suggest checking out the
Disney Dining Reservations page online and making a few other dining reservations if there are any that you would like. If there are particular restaurants that you would like to visit, make a reservation and that can start to structure for you which days you would head to which theme parks.
I think that all of the Walt Disney World theme parks have something to offer for a seven-year-old. The good news is that seven-year-olds are typically tall enough to ride almost everything. My daughter loves Kilimanjaro Safari and Kali River Rapids at Disney's Animal Kingdom. At Epcot, our family favorites include Soarin' and Spaceship Earth. We always try to arrive early to enjoy Toy Story Midway Mania! at Disney's Hollywood Studios. At the Magic Kingdom, we all enjoy the Haunted Mansion and it's a small world together. Many people suggest saving the Magic Kingdom for last as it is often what children have in mind as what Walt Disney World is, so ending with that is a good idea.
Be sure to spend some time at your resort. Disney's Art of Animation Resort is beautiful! Spend some time relaxing by The Big Blue pool. It is often these times that are our favorites on vacation.
