I've actually visited during the same early-November time frame a few years ago. It's amazing what Santa's Elves are able to with a little bit of Pixie Dust, like completely transform Disney's Hollywood Studios from fall to holiday decor literally over one night. While I remember things not being one hundred percent holiday complete when we visited the second week of November, more Disney winter decor is added every night. It became a fun game to spot what wasn't there yesterday!

great article about 2017's gingerbread displays, and it even includes the dates each officially opened. You can absolutely stop by at any point during your vacation to watch the larger-than-life creations come together, but you might miss out on the opportunity to buy a baked tile or chocolate treat similar to what is used in the actual display.
Other fun holiday happenings are
Mickey's Very Merry Christmas Party, which is a separately ticketed event that features meet and greets with rarely seen characters, a Christmas Party specific parade and snow on Main Street U.S.A. Disney Springs hosts a Christmas Tree Trail with over 20 Disney-inspired timbers. And Epcot recently introduced the
International Festival of the Holidays, which highlights the festive traditions of the cultures of the World Showcase, snacks and all.
