Walt Disney World Resort is right around the corner! You will be visiting Mickey at the most magical time of year, too! I love seeing the Magic Kingdom park all decorated for the holidays.
Being a mom of a kiddo who is extremely tall for his age, I completely understand your concern regarding whether or not a birth certificate is needed as proof of your child's age for admittance into the parks; Mouseketeers under the age of 3 do not require a ticket! I can tell you from experience, I have never had a Cast Member ask me for proof of my son's age, and during our last trip he was 2 1/2 years old. Once a Cast Member did ask me his age and I told her, but it was no issue at all! With that being said, if you would feel more comfortable with a photocopy of your daughter's birth certificate just for piece of mind, I suggest bringing one along. In my opinion, the likelihood of being asked to see it is quite low but in the off chance you are, you'll have it ready!
