Thanks for bringing your question to planDisney! I don't know how tall your children are, so I’ll focus on attractions that have no height requirement or a 35-inch height requirement. Boat rides may fit your family in one row, and some rides have two rows per ride vehicle, which should also fit your family. I'm listing attractions based on my experience, but ultimately, the Cast Members at each attraction can let you know the best seating arrangement for your family.
Magic Kingdom:Buzz Lightyear’s Space Ranger Spin- should fit 2 children and an adult, but there are only two blasters in the vehicle

I highly recommend taking rides on the Tomorrowland Transit Authority PeopleMover and Walt Disney World Railroad. My kids also really enjoyed the shows like Walt Disney’s Enchanted Tiki Room and Country Bear Musical Jamboree. If your kids can handle stairs, Swiss Family Treehouse is a staple on our Magic Kingdom days, my kids love climbing to the top to see the view of Magic Kingdom.

The Seas with Nemo & Friends
EPCOT also has great areas for young kids to explore. Advanced Training Lab is an indoor play area near the exit of Mission: SPACE. Bruce’s Shark World and Turtle Talk with Crush are perfect for young kids, and you can easily visit after enjoying The Seas with Nemo & Friends. Then, if your kids aren’t ready to get back in the stroller yet, you can walk over to Journey of Water, Inspired by Moana, where your family can follow a walking path and interact with water like Moana.
Hollywood Studios:Alien Swirling Saucers
Mickey & Minnie’s Runaway Railway
Toy Story Mania- ride vehicle only has two spring-action shooters
Hollywood Studios has a lot of shows your kids may enjoy, like Disney Jr. Play and Dance!, Beauty and the Beast- Live on Stage, and For the First Time in Forever: A Frozen Sing-Along Celebration. Two new shows, Disney Villains: Unfairly Ever After and The Little Mermaid- A Musical Adventure are debuting this month.
Animal Kingdom:Kilimanjaro Safaris
Na’vi River Journey
Wildlife Express Train- this will take you to Rafiki’s Planet Watch and the Affection Station which is a small petting zoo!
Make sure you check the My Disney Experience app for showtimes for the Festival of the Lion King and Winged Encounters- The Kingdom Takes Flight.
