    Planning a trip in Oct. with my family, and am thrilled my parents want to come too. If we make an ADR for all of us for a meal and last minute my parents opt out of the meal, will the restaurant take 5 of us on time rather than the 7 in the reservation?

    You shouldn't have any trouble if your parents decide not to join you after all.  A couple of years ago we vacationed with my sister-in-law and included her in all of the dining reservations we made ahead of time.  During our trip she became ill and was unable to join us for a few of those meals.  It wasn't a problem at all; the Cast Members didn't even raise an eyebrow when I explained the situation.  In our case, it was just one person fewer than the reservation stated, but even with two fewer people you should be just fine.  So go ahead and plan on them joining you!
