If being in the center of it all is what you're looking for, you could try staying at one of the resorts on the "monorail loop" that circles Seven Seas Lagoon in the Magic Kingdom area. You can't beat Disney's Contemporary Resort for location. It's about a 10-minute walk from the front entrance of the hotel to the bag check at the Magic Kingdom, or a leisurely monorail ride (from a station inside your hotel) to the front entrance or to the Ticket & Transportation Center to connect to Epcot.
As for which parks to visit, it depends on your family's interests, but here are some highlights of each:
Magic Kingdom Park - Cinderella Castle soars above Fantasyland, or try the mountain range: Space Mountain, Splash Mountain, Big Thunder Mountain Railroad
Epcot - Future World features Test Track and Soarin'; World Showcase offers sights, sounds and tastes of 11 countries
Disney's Hollywood Studios - Drop in on the Twilight Zone Tower of Terror, take a ride on the Rockin' Roller Coaster, or catch the Fantasmic! fireworks show
Disney's Animal Kingdom - Ride through animal habitats or hit thrill rides like Expedition Everest or Kali River Rapids.
For a short visit, I'd decide which rides or shows your family would like to see and build from there.
