Regarding coolers, Disney World does not permit coolers with or without wheels larger than 24" (61 cm) long x 15" (38 cm) wide x 18" (46 cm) high. My gut tells me to strongly consider a locker so you don't have to maneuver through the parks with extra bags or coolers. Enjoy your vacation.
