What a wonderful trip you have planned!
I don't think that 2-3 reservations per day will make you feel rushed at all, provided you do a little careful planning to keep the transportation
between two reservations to a minimum.
For example, we often plan a late dinner at Chef Mickey's on a day when we had an early lunch at The Crystal Palace. One quick ride on the monorail, and we're at our next location. The various Character Dining experiences at the Grand Floridian, too, make for easy monorail travel to Magic Kingdom as well as Epcot, where you can also enjoy character meals at The Garden Grill Restaurant or Akershus Royal Banquet Hall, among other choices. Check out the
list of Character Dining offerings at Walt Disney World, to map out your daily dining choices based on location, and timing, then choose 2 or 3 per day that aren't literally on opposite ends of the World.
Keep in mind, too, that with the Deluxe Dining Plan, you can also use 2 of your meal entitlements to enjoy that most special Character Dining experience, Fairytale Dining at Cinderella's Royal Table. This is a smart use of an extra meal entitlements, if you'd really love for your little princesses to experience the Castle
and if your travel arrangements make either your arrival day or departure day a little too short to enjoy three full meals in WDW.
(And if at some point, you would rather grab a Quick-Service Meal at one of the many Quick-Service locations, your Disney Deluxe Dining Plan allows you to do that, too!)
