You pose a very good question, one that I have asked myself as a Mom of four kids. The great news is that since your youngest is still considered an infant he/she won't count towards room occupancy. However do make sure you note all of your children on the reservation and request a crib (pack-n-play style) for the baby.
You have many choices for
Rooms in Walt Disney World for 5 Guests or More. What is your budget? If you are looking at a value category I highly recommend a family suite at the
Art of Animation. There are several pools at this resort, but the one that stands out is the Big Blue Pool. It is the largest hotel pool on Disney property. There are only quick service dining choices at the values.
For the moderate category I recommend
Port Orleans Riverside Alligator Bayou rooms. These are the only rooms from this resort that can sleep 5 plus an infant. There is both quick service and table service restaurants at Port Orleans Riverside. The pool has a slide and a spa/hot tub. Since it is a moderate category there are more amenities on the hotel grounds than a value resort.
Most of the deluxe resorts have rooms that can sleep 5 plus an infant. My personal recommendation from this category is the Beach Club. It has a splashtastic pool that rivals a small waterpark. The pool even has a sandy bottom! The Beach Club has both table service and quick service meal options. It also has location, location, location. It is just a quick stroll over to Epcot where you can find even more dining choices.
