Hi Rina - depending on which parks you go to, you can definitely see more characters than you've listed.
Characters, schedules, and locations do change, but here are a few other characters I've seen at the parks:
Animal Kingdom: Rafiki, King Louie, Pocahontas, Lilo, Stitch
Epcot: Chip n Dale, the Beast, Aladdin
Magic Kingdom: Pinocchio, Tinkerbell and ferries, Eeyore, Piglet, Cinderella's Stepmother and Stepsisters, Captain Hook
Hollywood Studios: Lightning McQueen, Mater, Power Rangers, Woody, Buzz Lightyear, Jo Jo, Goliath, Handy Manny, Little Einsteins, Lilo, Stitch, Chip n Dale
You can definitely get the villains to sign - I've seen a few villains primarily at the Magic Kingdom.
