I can't think of a more perfect place to celebrate a 30th birthday than Disney World!!!
There are lots of things at Epcot that could entertain a 16 month old. However, if you think that you can really enjoy the day without thinking of him every second to the point you can't relax and have a good time, I'd leave him with friends for the day & enjoy your birthday. Now, I know from experience that its
hard to leave kids but at his age, he's not going to get mad at Mom & Dad for leaving him while they go to Disney. Besides, couples need to spend some adult time together.
There are lots of great dining locations at Epcot & once you've decided on the day you're going, call 407-WDW-DINE to make reservations which can be made up to 180 days prior to your trip. Be sure to tell them you're celebrating a birthday. If you need suggestions of locations, let me know.
You'll be able to enjoy some super fun attractions that have height requirements without having to utilize the child swap option. Soarin', Test Track and Mission: Space are off the charts exciting.
You'll also be able to take your time strolling through the World Showcase. There are some great locations to sip and have an adult beverage.
IllumiNations: Reflections of Earth is an amazing nighttime performance but may be past bedtime for some little ones.
