I have food allergies as well, and find that Walt Disney World is the absolute best at handling food allergies and
special diets. There are some things you need to do on your end first, to ensure a smooth dining experience for your son.
First of all, for any Table Service meals that you'll be booking a dining reservation, note in the reservation that there is a food allergy. There are pre-selected allergies listed online, and if you don't see your son's allergy, just check 'other.' When you arrive at the restaurant, your ticket will be printed, and the hostess/host will seat you. Food allergy will be noted on the ticket. Your server will then explain that the chef will come speak with you about the allergy (or allergies.) The chef will come to your table and discuss your son's needs, and prepare a safe meal for him. This will be prepared in a separate area of the kitchen to avoid cross-contamination. If dining at a buffet, the chef will offer to walk the buffet and talk about safe options, and will even offer to prepare special items in the kitchen for your son.
At Quick Service restaurants, you'll notify the cashier that you have a food allergy. At Quick Service ordering kiosks, there are also options for those with food allergies, but if they are not common allergies you might not find them on the kiosk. Just ask for help. Once the cashier has been notified, the chef will come up and speak with you about safe options for your son.
