You're first Disney vacation is certainly exciting, but it can often be overwhelming when you don't know what to expect. I'm not sure if I can answer EVERY question for you in one message, but hopefully I can get you started. Feel free to ask some follow up questions to add more detail to your trip.
Do you have regular base tickets, or did you add on the Park Hopper option? I'm going to assume you have regular tickets. In which case, I would tend to avoid going to parks with Extra Magic Hours. I'm also showing you my top 3 attractions at each park for families with children your age. I left your arrival/departure dates free, because I'm not sure how much time you'll have during those days.

Some of my "must sees" have height requirements. If your 4 year old is at least 40 inches, he will be able to ride most attractions. It's also very important to take a break in the middle of the day. Go back to your resort to get out of the heat, swim, and REST.
As far as character dining, our family really likes Tusker House at Animal Kingdom, Garden Grill in Epcot, and Crystal Palace (Winnie the Pooh) at Magic Kingdom. Other fun dining experiences include: T-Rex, Whispering Canyon Cafe and 'Ohana.
