I am happy to help you update your plans for your trip! My dad decided to join us on our last trip to Walt Disney World Resort at the last minute, so I completely understand the stress of making dining reservations close to your vacation date. Flexibility and compromise will be key in getting updated reservations for your trip. I would suggest making two lists of restaurants. First, put together a list of "must-do" restaurants that are a priority for your family to experience. These are restaurants that you are willing to take any available reservation for a party of your size. For these restaurants, I would recommend looking for times that are outside of popular dining time. Enjoying "brunch" at 10:30 a.m. or lunch at 2 p.m. or 3 p.m. is a great way to get a reservation at your family's favorite restaurants.
In addition to your "must-do" list, make a list of dining experiences you are interested in for your trip. Are you looking to enjoy a Character Dining meal? Do you want to eat in Epcot's World Showcase? Are you and your husband looking for a romantic dinner? You can use this list to find some restaurants that may be new to your family and that are off the beaten path. I would recommend calling (407) WDW-DINE or (407) 939-3463 to make these reservations and explain to the Cast Member your rebooking situation and what kind of meal you are looking for. They can help you find reservations that are available for your family that fit what you are looking for.

My Disney Experience website and mobile app. I have even been known to score last minute reservations while we are on our trip!
