Your 3-day
theme park tickets are
fairly flexible - especially if you're visiting the Southern California area for longer than your two-night stay at the
Grand Californian Hotel & Spa. The main thing to keep in mind with multi-day tickets is that they must be fully used within 13 days of first use.
You're absolutely allowed to stagger your days - they do not need to be consecutive days, so you have flexibility within that expiration window to visit the park on the three days that work best with your vacation schedule.
One recommendation during your visit would be to check out
Rogers: The Musical playing in Disney California Adventure Park. It has a limited run that will be ending on August 31st, so this may be your only chance to see it! The Disney Parks Blog recently had a great article on

Also, since it sounds like you're staying in Disney's Grand Californian Hotel & Spa, make sure to utilize the "secret" entrance directly into Disney California Adventure Park during your trip! Just follow the signs in the lobby to the park and you'll enter the park from the hotel!
