You've asked a great question and I went and did some digging since I've only ever booked
dining reservations online. Unfortunately, the line for dining reservations has been disconnected and now reservations are all done online. Dining reservations can be booked 60 days in advance and tend to go rather quickly, especially for the more popular dining locations. Don't give up yet, I have some options for you if you aren't seeing the availability you are looking for during your dates.
My first tip is to take a look again at the dining reservations page in the last few days leading up to your arrival. This is when everyone is making last-minute plans and changes usually happen where cancellations are likely.
Another great option is the
mobile walk-up list in the Disneyland app. This allows you to head toward a participating location, pull up the location's page in the app, and join the walk-up list if there is availability at that time. Walk-up lists will close when the list gets full and then usually open up again at a later time that day. I use this frequently to enjoy same-day accommodations to my favorite dining location,
Lamplight Lounge - Boardwalk Dining.
Lastly, there is always the option to check with a Cast Member at the entrance or podium of a location to see if they have any openings to accommodate you that day. It is not a guarantee, but worth a try. I have been able to get into some places by doing this and I think it's always best to head there earlier in the day rather than later.
