EPCOT International Food and Wine Festival. You’ll be coming just in time to experience it all!
When it comes to tickets, their expiration date is dependent on the number of days in the Theme Parks you purchased. For example, if you purchased a 4-day ticket, it would expire in seven days after the selected start date. On the other hand, if you purchased a 3-day ticket, it’d expire five days after the selected start date. If you want all the details based on number of Theme Park days, you can find that information

According to
this FAQ, guests are only able to utilize unused days if the ticket hasn’t already expired. In your case, you wouldn’t be able to split the ticket between October and December since it’d expire under the above parameters.
When you purchase your ticket, you can however take a break or two during your five or seven day ticket window. For example, if you purchased a 3-day ticket, expiring five days after your start date, you could go to the Theme Parks one day, then have a rest day! You could follow that pattern until your fifth day when you’d need to use your final day of the ticket.
Also keep in mind that if you only what to do a couple days in October and some in December, you could also purchase two tickets, one for the days in October and the other for the days in December.
