It's a bummer that a member of your party isn't going to be able to join in on the fun. As long as the ticket has not been used, you can use the ticket at a later date by anyone. Per the
eTicket Terms and Conditions, Disneyland Resort tickets are not eligible for refunds, but if the ticket is unused and expires you can use the purchase price of that ticket towards a new ticket of equal or greater value. This means you have a couple of great options for that extra ticket.
Since you'll be visiting in May, I want to make sure you saw the
Disney Parks Blog announcement that nighttime spectaculars will be back this spring! The Main Street Electrical Parade and World of Color will be debuting at the end of April and Fantasmic! returns at the end of May. To make sure you are able to catch some of this Guest-favorite entertainment, be sure to check out the
Entertainment Schedule closer to your trip dates to see what nights and times there will be showings.
I also would love to share a tip with you and that is to make sure that all of your tickets are linked on at least one account together. This comes in handy to have one person in charge of scanning everyone's tickets at the park entrances and also makes things a lot easier if you are going to be using
Disney Genie+.
