Frank, I currently live and travel in my 44-foot 5th wheel so I am very familiar with planning out every aspect of a trip while pulling one - especially the parking situation! I think you'll be happy to know that there is surface parking at
Disney Springs called the Watermelon Lot and it will absolutely accommodate your recreational vehicle. The Watermelon lot isn't labeled and there aren't signs directing you there. What you'll want to do is look for the Cirque du Soleil Theatre. It's a big white building that looks like a tent - you can't miss it. There is a parking lot right next to it and that's where you'll be able to park. If you take a look at the
map of Disney Springs I am linking for you, you'll be able to see the Cirque du Soleil Theatre and the parking area next to it and that's what I am talking about.
If you're hungry while you are at Disney Springs, I recommend
The BOATHOUSE. It's my very favorite restaurant at Walt Disney World. The menu is extensive and has so many great choices but my go-to right now is the lobster roll served warm with butter and I always upgrade to the truffle fries. Yum!
