I was thinking about this while answering one of your other questions - I'm glad you asked. During your visit, the time for park hopping will still be set at 1:00 p.m., so I would definitely plan for that during your stay.
I just visited the Disneyland Resort with my family in November and was thinking through the same thing - which park will our kiddos want to start at each day? For our trip, I ended up just switching back and forth between starting parks for each day of our trip, and it turned out great! The mornings are such a fantastic time in both parks since it is typically a bit easier to get on some of the more popular attractions and book Lightning Lanes (if you purchase the Genie+ Service, which is needed to access this service). We also LOVE breakfast food in particular and enjoyed trying out the different offerings (our favorite breakfast item was the
Ever-expanding Cinna-Pym Toast from Pym Test Kitchen in Avenger's Campus at Disney California Adventure).
My recommendation would be to take your best guess for which parks to start at each day, book those park reservations based on that guess ASAP (if you haven't already), and then make a fun game with your kiddos! If they love the
thrill-based attractions, you could see how many of those rides you could ride in each park before the end of the morning. If
character experiences are more of your family's thing, you could see how many characters you can meet in each park in the mornings. Maybe it's how many different
breakfast foods and snacks you can try! We took this approach on our recent trip and still found we didn't have enough time to fit everything in that we wanted to do.
