Well I admire your spontaneity! I'm an obsessive planner so let me help you figure out the first steps that you need to take.
1 - Book your resort!
If you are looking for the least expensive option, look at the value resorts which include Pop Century, All-Star Movies, All-Star Sports, and All-Star Movies.
If you are looking for a great value, try a moderate resort. They offer some great amenities at a reasonable cost. With two small kids, I would suggest Port Orleans French Quarter. It's a small but charming resort which would not be too overwhelming for your first WDW vacation. It has a nice pool, boat transportation to Downtown Disney, bus transportation to all the theme parks, a food court, small playground and more!
