    How open are the TS restaurants to substitutions in general? ie at Le Cellier (lunch) asking for the Filet Mignon to be served with the potato gratin instead of the risotto, or asking for risotto with the salmon at Akershus dinner instead of mash?

    The Table Service Restaurants are very accommodating with requests from guests.  If you have any food allergies, I would discuss this with your server as soon as you are seated.  There really shouldn't be any trouble with simple substitutions at all.  Ultimately, the Chefs at all of the restaurants want you to love your meal and will do anything within reason to ensure that this happens.  Le Cellier at Epcot is one of my favorite restaurants in all of Disney!  I love the Filet Mignon as well.  My suggestions would just to be upfront with your server at the beginning of your meal.  You may also ask to speak directly with the Chef if needed.  I hope your dining experience is magical!
