Welcome to the Disney Parks Moms Panel! I am not sure that this response will get to you in time, but it may be helpful regardless! It is always my pleasure to greet a fellow North Carolinian.
The
Walt Disney World Water Transportation information page includes some of the information you need. Towards the bottom of the page, you will see a map with the boat launch colors indicated. Although most boats operate on 15-30 minute intervals, it is best if you ask a cast member while in the parks since water conditions can alter the launch schedules. My family loves the water transportation and most recently used it to get from Magic Kingdom to Disney's Polynesian Village Resort on our last visit.
We also have used water transportation to exit Magic Kingdom near park closing time because the monorail lines are often quite long as guests try to leave the park. But, if you have just missed the boat, it could take some time for the next one to arrive so you will just have to make your best guess about wait time in line for the monorail versus a bus or boat when you are on site.

My Disney Experience Mobile App. The "Get Directions" feature helps us find transportation options and estimated transit times between locations. I use it to plan even before we get to the parks. It helps me estimate what time we will need to leave a park, for example, to get to dinner at a resort.
