Okay, I'm in Canada and booked my first trip for my family May 21 - 31 not knowing there was a U.S. holiday to compete with! We are staying at the Polynesian/have a 10 day hopper pass...would the water parks be better on the weekend & avoid theme parks

Yes, you have chosen Memorial day weekend.   No worries, you will still have a great time!   The good news is that it appears that you have scheduled plenty of days to see everything despite this.

Over that weekend, the crowds will likely be larger than the rest of your time no matter where you choose to go.   However, I think your idea of visiting the water parks on those days is a good one.   The water parks, while also likely a bit more crowded, will offer more options that have limited wait times.   In addition, since you have the park hopper option, you could choose to visit one of the main four theme parks at night when daytime crowds start to thin out.

Another option to consider is that you may want a "break day" during your vacation to just relax at the pool, visit Downtown Disney, etc.   If so, one of these Memorial Weekend days might be a good choice

Enjoy your first trip to Disney!
