    Hi Andruletta,

    Thanks for writing back (again!)  Off-peak dinner hours (in my experience) are early and late.  I know, not anything earth-shattering, but helpful when trying to snag tough-to-get reservations.  We've done well trying to get the earliest possible dinner reservation at a popular restaurant (at 1900 Park Fare, for example, we've eaten dinner as early as 4:30).  When my husband and I go out alone (which we try to do at least once each trip), going out late works great when we try to get reservations at Signature restaurants.  I've even gotten last minute (i.e., same day) reservations at California Grille, Citricos and Jiko when we've eaten after 9.

    Another idea is trying to book dinner inside the parks during one of the main shows.  At Hollywood Studios, for example, I've been able to get reservations at some of the more popular table-service restaurants during both the early and late show of Fantasmic.
