I love Fantasmic! I checked the on-line schedule for you. It shows that Fantasmic! will only be performed on October 3rd at 8:00 p.m. during your trip. Be sure to get there at least 60 - 90 minutes prior to show time as this is a super popular show and fills up quickly since it is now only offered on select evenings.
You can check park hours (including Extra Magic Hours), parade & fireworks schedules for all four of the theme parks on-line by clicking on the following links:

Select
October from the drop down list next to the
View Month tab. That will take you to the
October calendar which will list park hours and Extra Magic Hours. Click on a specific day for parade & fireworks schedules. Be sure you pick up a Times Guide as you enter the parks to confirm as schedules are always subject to change without notice.

http://disneyworld.disney.go.com. Then choose a theme park under the
Parks button at the top of the page which will take you to the overview page for the park you selected. On the left side of that page, you'll see an option for the
Calendar for that park. From there, follow the steps listed above.
