I'm loving that you're planning to take in a showing of
Fantasmic! at Disney's Hollywood Studios. In this outdoor theater created especially for this nighttime spectacular, you'll see Mickey Mouse and his friends battle Disney Villains as his dream turns into a nightmare. I have a tip for you. If you don't want to get wet, avoid the first few rows. Personally, I like to sit near the back so I can win a battle of my own with the crowds as they exit the theater. There isn't a bad view in the venue, though, so no matter where you choose to sit, you'll have excellent viewing.

I double checked the
Hours & Events Calendar for you on February 15, and you are correct. Hollywood Studios closes at 9:00 PM, and there is one performance of Fantastic! that night, at 9:30 PM. It takes some time to walk toward the theater and find a seat, so once the park closes, head over to the theater and pick your spot.
I like to grab a snack on Sunset Boulevard on my way to the theater, being mindful of the park closing time. My go-to is
Hollywood Scoops for some ice cream. You can take your food and drinks into the show, if you like.
