    If we do not purchase the park hopper option, are we able to reenter the same park multiple times throughout the day? For example, could we go to Epcot, leave to go to our resort for lunch and back to Epcot after lunch?

    Absolutely Carrie!  With a non-parkhopper admission ticket, you may exit and re-enter the same Disney theme park as many times as you like during the day in which the ticket was activated.  Leaving Epcot to enjoy lunch at your resort will be no problem whatsoever.  Just bring your tickets with you when you re-enter Epcot later in the day.
