It depends on what all you and your family do on your first Epcot visit. For example, on some trips, we've gotten the Park Hopper and split Epcot up into two visits: one visit to hit all the rides, the second visit just for the World Showcase (visiting the countries). Since going through the World Showcase generally takes shorter time compared to the rides (standing in line, etc.), we allow a little overflow to catch some of our favorite rides again (like Soarin). The only issue may be height restrictions on some of the rides for your 5-year old (unless she's a tall 5-year old). However, the World Showcase has many Kidcot Fun Stops (particular designed for the pre-schooler, and 5 year old), so she may enjoy this if she likes crafts.
Overall, if you spend an entire day at Epcot, and there aren't any repeated "must have's" from your girls, one visit should be enough.
