Our 1st night, I wanted to eat in Epcot park but, didn't plan on doing anything other than dinner. I bought a 4 day hopper. Can I go in the park just for dinner and still be able to use the hopper pass towards the 4 parks for 4 consecutive days?

You certainly can use one day's admission from your four-day park hopper pass to eat a nice dinner in Epcot, Christy.  If you do so, you'll then be left with three days to enjoy the theme parks (whether you use them consecutively or not is completely up to you).  Because you have only four days worth of theme park admissions, I'm not sure that I would use an entire day's worth of admission just for dinner.  Perhaps your best bet is to opt for dinner at one of the resort restaurants on that first night.  It would certainly make your theme park admissions go a lot further!  I hope that helps.
