You certainly have a wonderful adventure planned for your niece! I agree with going to the Magic Kingdom to the Princess Meet and Greet at the Town Square Theater. Rapunzel is sometimes there as well. Make sure that you consult your Times Guide that you can pick up upon entering the park for times they are available. I would recommend having breakfast or lunch at the Akershus Royal Banquet Hall in the Norway Pavilion at Epcot. You will meet Belle in her golden dress and pose for a photograph before being seated at your table. You will also meet four other Princesses during your meal- usually Snow White, Aurora, Ariel, and Cinderella but I have also seen Mulan and Jasmine there. Pocahontas can be found at the entrance to Animal Kingdom or at Rafiki's Planet Watch at the Conservation Station. Tiana is found with her Prince Naveen in the Liberty Square Dock area at the Magic Kingdom. Mulan is usually found around the China Pavilion at Epcot. Finally, Merida, the newest princess, is found at the Fairytale Gardens next to Cinderella's Castle at the Magic Kingdom. You will also see the three little bears as well!
