    Hi My nephew is autistic and is on a gluten/caesin free diet. My ? is if we order a hamburger can the chefs make a bun that is gluten free and has for items that have diary in them will they have the special kind of diary item needed to make the meal?

    I can gladly tell you that Disney is probably one of the best places on earth to come with food allergies!

    I had an informative conversation with a chef from Jiko in December who explained how Disney accommodates those with food allergies. You used to have to talk to each restaurant individually, but now there is a central "file" created on your party when you make your travel arrangements. Once you alert Disney that someone in your party needs a gluten-free diet, that informatioin will be forwarded to all the chefs in the restaurants where you have dining reservations.

    The chefs actually utilize the dietary files to help them order menu items for some of the restaurants!  So the sooner you call Disney and have them make a note on your travel arrangements about your gluten-free needs, the quicker a file will be generated for you.

    Now, this will also mean that you may want to choose to eat at table service restaurants, rather than taking a chance on counter-service, but you can always ask to speak to the chef for each counter-service restaurant before ordering.  In the past, they have had "books" that list the ingredients for most menu items.

There are recommendations for restaurants and even pictures of gluten-free pancakes from Chef Mickey's on the site!
