Hello Karen!
Thanks for stopping by the Disney Parks Moms Panel. Disney's Pop Century Resort is my family's favorite Value Resort hotel. Now that they're renovating the rooms with queen-sized beds and a clean, updated look, I love it even more!
My favorite Moderate Resort hotel is
Disney's Port Orleans Resort - French Quarter, because I love that New Orleans vibe. It's also the smallest Moderate Resort hotel, and I enjoy that quaint feeling. I also enjoy being close to the main building, because I can eat beignets for breakfast with a short walk. The rooms are going through some minor refurbishments and should be completed by summer of 2018. It also has a fun aquatic play area by the pool.
If your daughters love princesses, then I suggest taking a look at the Royal Guest Rooms at Disney's Port Orleans Resort-Riverside. Those rooms are royally spectacular and are filled with regal touches. The crown jewel may be the headboards on the beds; they sparkle with built-in lights, giving you your own private fireworks show as you lay down to sleep.
Both
Disney's Coronado Springs Resort and Disney's Caribbean Beach Resort are undergoing construction. The rooms at Coronado Springs have recently been renovated, and they are beautiful. Also the construction here seems to be far enough away from guest rooms to not be an issue with noise. Coronado Springs also has one of the best pools on property, in my opinion. Since you'll have a car, I would also recommend it for your family. I love the Spanish-style buildings.
I hope this helps! I suggest looking at pictures and deciding what themes and amenities are most important for your family. My girls love giving their input when deciding where to stay. Have a magical vacation!
